Pineapple Teriyaki Stir-fry

  • 2 LBs ground bison
  • 1 green bell
  • 1 red bell
  • 1 yellow bell
  • 1 diced yellow onion
  • ½ diced red onion
  • 10oz bag of broccoli
  • 5 garlic cloves, minced
  • 1 TB diced ginger – fresh or pickled
  • 2+ cups of diced pineapple – I used a fresh one but canned and drained would work too
  • 2 cups rice
  • 2 Green Onions diced
  • Toasted sesame seeds
  • Teriyaki sauce

  1. Cook rice according to package
  2. Sauté the broccoli, bell peppers and red onion in some toasted sesame oil over medium high heat for about 2-3 minutes
  3. Remove veggies and set aside
  4. Add some more sesame oil to the skillet, add garlic, ginger and yellow onion and cook for about 1-2 minutes
  5. Add in bison meat to the onion mixture, add salt and pepper
  6. Once the meat is cooked, add the veggies back into the skillet with the meat
  7. Continue cooking for a few more minutes and stirring to incorporate the veggies and meat and get an even cooking
  8. Add the pineapple and cook a few more minutes until everything is heated through

*Be careful to cook just until everything is heated, this is best when there is still crunch and crisp to the veggies – no one wants soggy stir fry!

  1. Plate the rice and add the stir fry, drizzle with teriyaki and top with sesame seeds and green onions
