Thai Salad

Sometimes I just really crave a salad - well to be honest, I really crave salads a lot, some people tell me I eat like a rabbit. My mother would finally be proud of all of the veggies I eat in my adulthood. (sorry mom for giving you so much grief as a kid). Considering the health benefits that bison has, it makes sense that bison lovers may also be salad lovers! And to the none salad lovers, you absolutely need to try this because you will be amazed by the flavors this salad packs and how "un-salady" this salad actually is.  



  • Sirloin steak
  • 2 TB honey
  • ½ cup low sodium soy


  • Romaine lettuce
  • Shallot, thinly sliced
  • ¼ cup green onions, diced
  • ¼ cup mint, chopped
  • ¼ cup basil, chopped
  • ¼ cilantro, chopped
  • Red bell pepper, julienned
  • ½ English cucumber, large dice
  • Jalapeno or red pepper, seeds removed and thinly sliced
  • Rice noodles
  • Peanuts 


  • 1 garlic glove, minced
  • 2 TB fresh lime juice (about 1 whole lime)
  • 2 TB sugar
  • 2 TB low sodium soy sauce
  • 6 TB hot water




  1. Marinate the meat:
    1. Place bison in a bag or container
    2. Mix honey and soy and pour over the bison, be sure the steak is completely covered with the marinade
    3. Store, sealed, in the fridge for at least an hour

*Adjust honey and soy levels to taste


  1. Noodles
    1. Cook noodles according to package
    2. Drain and set aside to cool


  1. Steak
    1. Remove meat from fridge at least 30min before cooking
    2. Pat dry
    3. Heat skillet to medium-high/high
    4. Sear sirloin for a few minutes each side to your temperature of choice

*I recommend using an accurate thermometer and cooking to medium/medium-rare and pulling the steak off the heat at 130°

  1. Cover lightly with foil and let steak rest for 5-10min before slicing into strips


  1. Dressing
    1. Mix lime and minced garlic in a small bowl and let sit for 10-15min
    2. Add sugar to the hot water to dissolve
    3. Combine the garlic/lime mixture and the sugar water
    4. Add the soy sauce


  1. Assemble salad
    1. Add romaine, mint, basil, cilantro to a large bowl
    2. Top with noodles, cucumbers, bell peppers, shallots, jalapeno
    3. Place sliced meat on top
    4. Garnish with green onions and peanuts
    5. Drizzle with dressing
