The Arm Roast is similar to the Chuck Roast and comes from the same shoulder area of the bison; however it it typically a boneless roast. This cut is also great for a roast as well as any other recipe where you braise and cook the meat low and slow which tenderizes the lean muscle.
Roasts range in weight from 2 - 4 pounds per roast / $13.00 per pound
